Dairy Free Peanut Butter Chocolate Chip Fudge

                                                 

Oh yes... I present to you peanut butter chocolate chip fudge.


Delicious.


Dairy-free.


And a lot easier than you might think!

Recipe notes and procedural adaptations: 

1. This recipe is inherently dairy-free, as long as you are sure to use dairy-free chocolate chips. I used my Trader Joe's chocolate chips. I imagine this would be absolutely great with mini-chips, with dark chocolate, white chocolate... sorry had to rush to make more.

2. The ingredient list is really simple, just peanut butter, coconut oil, vanilla, salt, and chocolate chips. I would recommend using standard peanut butter and not natural- I did not try it with a natural version, but my assumption is that it might be more difficult to get a firm texture. 

3. The creator's instructions guide you to melt and cool the coconut oil, then stir the ingredients together. then you're supposed to get the mixture into a parchment paper lined pan and freeze. I made a few modifications to these steps as I went and I think it made the process even easier: 

3a. I melted the coconut oil and peanut butter together, to make a very easily stir-able liquid. I did this by microwaving the the coconut oil and peanut butter for 30 seconds, then added in the vanilla and pinch of salt.

3b. Realizing that if I stirred in the chocolate chips immediately they would melt, I chilled the mixture for about 30 minutes in the fridge. Now, melted chocolate in peanut butter fudge WOULD DEFINITELY NOT BE A BAD THING but I was striving to recreate the results I saw posted. 

3c. Once cooled, I added in the chocolate chips and poured it into my molds. I think either way, there is a bit of waiting- either waiting for your coconut oil to melt and cool, or the whole peanut butter mixture. However, I think melting it together then chilling likely made it more easily pourable/spreadable.

I keep finding more and more uses for them. This is far from a sponsored post, I just really like them! They come in all sizes but last Thanksgiving they ran a bundle sale, so I purchased the 1 cup and tablespoon version. If you look closely, they have a line so that you can easily fill 1 or 2 tablespoons per square. This meant I did not have to fiddle with parchment paper, and that I would have perfectly proportioned fudge without needing to defrost and cut each square


. After 2.5 hours, they popped out super easily and cleanly, so the perfectionist in me is quite satisfied. 


Results:

Perfectly proportioned, fudgy, peanut butter and chocolate-y goodness. Truly a GOOD THING. 



Discussion:

I love finding recipes that are naturally dairy-free! Again, the only modification was ensuring that my chocolate was dairy free. 

I also probably took more time to write about this fudge than it actually took to make it. Make this, you won't regret it. Unless you're like me, and halved the recipe again, so I guess the only thing left to do is... make more!
