Dairy Free Chocolate Molten Lava Cakes (+ Bonus Level)

Another recipe I've had in my arsenal/sad hand written book...
Molten Lava Cakes!
That's my poor way of saying that I don't have the original reference for this recipe, but I want to be clear that I did not innovate this on my own. At some point, I copied it down from some internet, magazine, or cook book long ago and am now sharing it with you.
Recipe Reference:
This is for 2. It scales up easily for 6, depending on the size of your ramekins.
Ingredients:
3 1/3 T butter
1/3 c. chocolate chips
1/6 c. all purpose flour
1/2 c. powdered sugar
1 large egg
1 egg yolk
1/3 t vanilla
1/3 t instant coffee grounds
Directions:
Preheat oven to 425. Spray 2 ramekins (I also recommend dusting with cocoa powder).
Melt chocolate and butter (use double boiler or microwave).
Add flour and sugar.
Stir in egg and yolk until smooth.
Add vanilla and coffee and mix until combined.
Divide into ramekins and bake for 10 minutes.
Invert onto plate, or serve as is.
Dairy-free modifications:
1. I used a 1:1 ratio with my margarine of choice instead of butter.
2. Similarly, I used dairy-free chocolate chips.
Top choices for dairy-free chocolate chips:
(I went with semi-sweet in this recipe, would be a deeper and less sweet flavor with dark chocolate)

Level Up:
Not specific to dairy-free, but I adapted this recipe to be a chocolate peanut butter molten lava cakes. I poured half the batter into the ramekins, dotted each with a tablespoon of peanut butter, and poured the rest of the batter on top before baking. Let's just say, in my n = 1 (besides myself) case series design, results were extremely positive.
